Humane Slaughter?

"Animals must not be unduly stressed and must be adequately lairaged whilst awaiting slaughter". McKey Food Service Ltd also requires from its pork supplier that "Animals must not be unduly stressed: they must be handled humanely at all times and adequately lairaged whilst awaiting slaughter" and that "Animals should be held in lairage for a minimum of three hours and a maximum of six hours prior to slaughter".
